Blender Batter Pancakes
Recipe:
2 ½ cups buttermilk
3 eggs
3 T. oil
1 ½ t. vanilla
2 cups of whole grain flour (hard white, soft white, or spelt)
¾ cups oatmeal (not cooked)
Blend this on high speed until smooth.
In small bowl mix:
3 T. sweetener (optional)
1 t. salt
¾ t. baking soda
1 T. baking powder
Gently add this to the batter and cook as for pancakes.

This is another Saturday morning favorites. We have probably made this well over 100 times. This is the base recipe. You can substitute half milk, and half yogurt for the buttermilk, you can add blueberries or chocolate chips. Just use your imagination.
