Soft white wheat is also known as Pastry Flour and is lower in protein and gluten than hard wheat. Pastry flour is ideal for lighter, flakier pastries, pie crust, cookies, muffins, cakes, gravies, sauces and more. For even better results you can sift your soft white flour to get the bran out - but don’t throw the bran away - add it to your next batch of muffins! Chemical and GMO Free.

Don’t get confused by the word “White”. White is just used to describe the color of the grain. It is also referred to as “golden” by some farms. It is NOT the same WHITE flour you get when you buy a bag of all purpose white flour. People get confused by the term “white” and will buy HARD RED grain thinking that is Whole Grain Wheat and Hard White grain is not. But rest assure! Hard White IS whole grain!

Milling

We mill on Mondays and ship on Tuesdays.

So if you order on Tuesday or later, good things do come to those that wait! But we do apologize for the wait. Once we start doing a lot more shipping we will be able to determine if we can ship later in the week. We just want to make sure the grain doesn’t sit in a postal truck over the weekend!
