Whole Grain Recipes
Pumpkin Muffins
From Wild Flour by Denise Fidler (This is one of our favorite cookbooks!)
1 cup honey
½ cup oil (we prefer coconut oil)
4 eggs
1 ½ c. cooked pumpkin (or 1 can)
3 ½ cups of fresh ground flour (preferably spelt
or soft wheat, but hard white wheat will work fine)
1 ½ t. baking powder
1 t. baking soda
1 t. salt
¾ t. cloves, ground
1 ¼ t. cinnamon
¾ t. nutmeg
Optional:
1 ½ c. raisins
1 c. coarsely chopped walnuts
Mix first 4 ingredients in a large bowl. In separate bowl mix together flour, baking powder, baking soda, salt, and spices. Add dry ingredients to wet by gently folding in. Add optional raisins and/or nuts. Drop into 18 greased muffin tins and bake at 400 degrees for 18-20 minutes. These freeze well.
